    beautiful when eaten hot with butter and new milk.
    Another bread called boxty was an early winter bread. it was made by scraping raw potatoes on a scraper. The scraper was made from a tin box which was opened out then a nail pierced through in order to make a rough surface on it.
    The potatoes were scraped into jelly. This jelly was put into a bag and the water squeezed out of it. It was then made into small flat cakes, and baked on a grid-iron or in some cases between two cabbage leaves. This bread like potatoe-cake was very nice when served with butter and new milk.
