2. Blood Puddings

   The only thing done around here now is to catch the blood of the pig. The puddings or intestines of the pig are cleaned. Through the blood people mix rice and onions then the puddings are stuffed and boiled. Much nicer than bought puddings.

   This food was dicarded in Diffier and the other townlands about forty years ago. The decay of the water mills brought about this. The oats were dried shelled and ground. Boys and girls were very fond of shellings as the dried oats was called. At Kilclare school there was a mill owned by Anthony Doherty the ruins of the mill and the mill race are there today. Kilclare is in the parish of Kiltabride on the road from Carrick onShannon to Ballinamore. The mill was exactly six miles from Carrick on Shannon. As a boy
