Boxty is made by scraping potatoes with a scraper. When sufficient potatoes are scraped the solid matter is left when the water is squeezed out of the mixture.
This solid matter is mixed with either flour or oat meal and is baked in a grid or standing up against a flag.
? is made by mixing flour and oat meal together kneaded with milk and water. When made it is placed between two leaves of green cabbage and baked on a large sandstone or the gríoasach.- Collector
