Before putting a cake in the oven, the old women always put a cross on the cake. This was done to bless the bread, The old people believed it was not right to drive a knife into a cake of bread. It is recorded, that a man once plunged a knife, in derision, into a cake & that blood issued forth.

Some clean straw was obtained, and placed on top. A weight was then placed over all. It was left thus for at least three days, in order to get sour. it was then fit for making bread.
