  1. Boxty
    A sufficient supply of potatoes is procured and washed. Then [?] they are grated with a grater. The grated potatoes are put into a cloth and the water is wrung out of them. Some boiled potatoes are peeled and grated adn are put into a basin together with the raw potatoes a little salt and one or two fistfuls of flour. When it is mixed it is formed into cakes and baked in an oven on a moderate fire. When it was is baked it is covered with butter and eaten hot
