allow the handle of the dash to come up through it. A joggler is put on the handle of the dash to prevent the milk from splashing up. When it is churning the butter is taken up and put into a butter pail.
It is then mixed well in spring water with two spades so as to wash out the milk. Then salt is added and it again well mixed. It is made into bars of two or three pounds and a sufficient amount being taken for the household the remainder is set aside for sale, if there is too much for household needs.
