    with their hands. When they are digging, they bring home as much as they want and they put the rest into a pit in the field. When they have all dug they bring them home in carts and put them in the barn.
    The best potatoes that grow round here are, Champions, Kerpinks, Snow-drops, Red roses, Epitures, Arnbanners, Arnvictors, Sheerces, Elephants and Flounders.
    Arnbanners and Kerpinks grow best in this district.
    Potatoes was used instead of starch. They peeled the potatoes first then they grated them, then they wrung the grated potatoes in a cloth. They kept the boxty water in the vessel until the starch sunk to the bottom. Then they throw out the water off it. Then they put it down and boiled it and then it is made into starch.
