    The best potatoes that grow round here are, Champions, Kerpinks, Snow-drops, Red roses, Epitures, Arnbanners, Arnvictors, Sheerces, Elephants and Flounders.
    Arnbanners and Kerpinks grow best in this district.
    Potatoes was used instead of starch. They peeled the potatoes first then they grated them, then they wrung the grated potatoes in a cloth. They kept the boxty water in the vessel until the starch sunk to the bottom. Then they throw out the water off it. Then they put it down and boiled it and then it is made into starch.
