- Long ago there was a man in Kilflynn and his name was Tom Henessey. He was working with a woman. Each day during the week a herring he got for the dinner. When the week was finished the woman asked him would he come working next week as well. He went up to the fire to "redden" his pipe. Then he looked up at the ceiling."Is it for the pattern of a sow you are keeping that meat." said he, looking at the two flitches of bacon hanging there. Then she knew he wanted meat for the dinner.
