    About a quart of water is poured in about half way through the churning. Hot water is put in if the butter is making too slowly, and and cold water slows up the process. The butter is skimmed off with a strainer. Carrot is sometimes put in to give the butter a good cream colour.
    The buttermilk is used for baking bread, it is drunk, it is given to calves or pigs and sometimes to the hens. Whenever we churn the neighbors come for a little can of buttermilk for making the bread.
