- (continued from previous page)in he always gives a hand. It is said if he went out without doing so he would have the butter with him. Also if a man comes in to light his pipe while the churning is going on, he takes care to bring a sod of turf with him and place it on the fire.
A big churning is usually done in about an hour and a half. The dash is usually moved upwards and downwards until near the end when a rolling motion is given occasionally from side to side in order to help to gather the butter.
