Home made starch.
The Irish people have always been remarkable throughout the continent for their thrifty labour and one of their principal products was that of home made starch.
Up to the present day the majority of them make it from their own potatoes in this form. The potatoes are first washed thoroughly with hot water and then with cold water.
They are then peeled until they all appear as white as snow.
