    during the churning in Winter to help the butter gather and some cold water is put in the churn in Summer. My mother lifts out the butter with two wooden spoons and she puts it into a dish and then she washes and salts the butter. The buttermilk is used for cakemaking and the remainder of it is given to pigs.
