- (continued from previous page)the flour. These cakes were baked in griddles before the fire. Milk was always used in kneading the cake. The mark on the top of the cake was made in the shape of a cross. These marks were made, in order to allow the heat into the centre of the cake. There were many vessels for baking such as an oven, a bastable and a griddle. Cakes were also baked in front of the fire standing against a support such as a slate. This was often made of iron also.
