The butter was then taken out of the churn and the buttermilk was drawn off.
Cold clean water was put into the churn, and the barrel was turned round to remove the buttermilk.
The washing of the butter then took place. Spring water was used for this purpose. The butter was broken up by the hand, and pressed from time to time with a wooden saucer to facilitate the escape of the buttermilk.
