- (continued from previous page)there is a screw at the bottom of the churn which lets out the milk and my mother or sister puts a crock under it and lets out the milk, the butter remaining in the churn. Then they tighten the screw again and add a pail of water to the butter. Then they turn the handle a fe times. This takes the milk out of the butter. The butter is then lifted out with a wooden scoop and put on a wooden dish. Salt is then sprinkled over it and it is rolled out with a wooden beater until the salt is evenly mixed with it, and all the water squeezed from it.
