- (continued from previous page)used. It was held in a position by a lever at the back. Every day two or three cakes were baked by the woman of the house. If the men had to go on a journey they took with them sufficient oaten to keep them. The cakes were about ½ inch in depth.
The wheaten cakes and the flour cakes were baked either on a pan in an oven, or on the griddle. The flour was mixed with soda and butter-milk added. On top the sign of the cross was always made. It was unlucky to give a cake away without first taking a piece out of it. The cakes were baked in a pot-oven. Potato cakes were made in the early Autumn when the potatoes were new and fresh. Boxty-bread was a great treat. It is still made at Hallow-Eve. The potatoes are grated and strained.(continues on next page)- Collector
