- Boxty bread is made in the following manner. A number of raw potatoes are procured, and grated. The raw pulp is then left on a damp cloth and all the moisture is pressed out. Some boiled potatoes are crushed on the losad and the raw pulp and a pinch of salt and soda are added. The mixture is then kneaded into cake form and cut into squares. These are spread on the floured griddle and baked for half an hour. They are then taken up, spread with butter and eaten while hot.
