- Churning
The churn we use is a dash churn. It is about three feet high. It is wide at the top and gets narrow in the middle and gets wide again at the bottom. There is a hole in the lid for the dash then there is a runner put on the handle of the dash it slips down and it covers the hole in the lid and it keeps the milk from coming out.
When the people are churning they put boiling water in it. They put it in at the beginning and if the churn is not doing right they put it in again When the churning is done the people stir the dash around to gather up the butter. Then they take out the butter with a butter dish. Then they wash the butter in water to take the buttermilk out of it. If the butter milk was left in it it would get sour and bad. Then they put salt in it and mix it. Then they top the butter into rolls with butter spades. There is about twelve pounds in the churn. The people churn once a week in the Winter and three times a week in the Summer(continues on next page)- Collector
