- (continued from previous page)mashed some boiled potatoes and added them to the raw ones, they then put in a pinch of salt and a little baking soda, and some buttermilk. Flour was then added to make it fairly stiff. The boxty was then formed into round pieces called "hurleys" put into boiling water, and boiled for about two hours.
When it was cold, it was cut into thin slices, and fried on the pan with bacon.- Collector
