- (continued from previous page)know that it is made. Hot water is poured in during the churning so that the butter wont be long coming on the milk. After the chur is made the butter is lifted out with a strainer and put in spring water to harden. Then it is taken out and salt is put into it and it is beaten with two butter-spades until all the buttermilk is gone out of the butter. Then it is made into prints and is fit for use.
The buttermilk is given to the calves and sme of it is kept to drink. - Food in olden times(continues on next page)
