People who had much milk had a Churning Machine: The machine was set up as close as possible to the dairy. It is exactly like a machine for threshing, indeed the one did both sorts of work.
The machine was usually worked by an ass. Then the horses and men were free to do other work as a small boy drove the ass at that.
Nowadays people keep the milk of Saturday night and Sunday morning for home. Some do not even keep so much, or any. This small amount can often be churned in the Creamery Can with a small dash.
Those (very very few) who do not patronize the Creamery have Separators. Only the cream has then to be churned, so very often one of the many types of "Barrel" Churn or "Tumbling" churn is used.
A small size suits in such cases.
