The various kinds of potatoes, sown in our district are: Irish queens, Champions, Scerries, Kerr's Pinks and Imperators. The potato which grow best in this district are "Kerr's Pinks."The making of starch - In olden times starch was made from potaotes. The potato is first scraped into a vessel, then this is put into a cloth and the water is squeezed from it into some sort of vessel. This water is then used for starch. The remainder which is left in the cloth was often used for bread which was called "boxty".How boxty was made - First of all they peeled some raw potatoes and then scraped them into a vessel. When this was done they put it into a losad and mixed salt with it. This was then kneeded and in a short time a cake was made.
