- Most of the country houses have thatched roofs. The man who thatches a house is called a thatcher. He thatches the house with wheaten straw, rye straw, or oaten straw.Thatching is done more frequently with oaten straw than with any other straw as the oat crop is the most plentiful grain crop in Ireland. The oats are threshed in Autumn or early in winter.
