    for propping up the griddle somewhat like the props holding ups photograph frame.
    Oat cake, butter, and fresh milk was looked upon as a treat fit for a king. "Boxty" was a much prized bread too. It was also served with butter and new milk. In later years tea was substituted for the milk. "Boxty" was made by grating well washed raw potatoes on a perforated tin called a grater into a pulp. The pulp was wrung as dry as possible in a strong calico bag (15 ins x 7 ins) This dried pulp was turned out on a bread board and mixed with a small quantity of mashed boiled potatoes, a little flour and salt for seasoning. Then it was well kneaded and either made into small thick cakes for boiling or into flat thin cakes for baking on a pan. This kind of bread is made here
