- (continued from previous page)They had an axle in the middle and also a hole in the top stone. They used to drop the grains into the hole and turn the top stone by means of the axle. The rough surface of the two stones rubbing together used to burst the grain and it used to come out at the edge between the two stones.
It was rough flour, and it took a long time to grind a small amount of wheat with it.
They made the cakes as we do, flour mixed with breadsoda and sour milk, but they baked them on A GRIDDLE. There were two "ears" on the griddle and they hung it on the crook with a hangers. The put the cake on this and when one side was baked they turned the other.
Long ago they never had currant cake during the year - they had it only for Christmas.
In some houses people had what they called querns for grinding the wheat - a kind of stone bowl(continues on next page)
