- A fitting called a griddle was the system of baking cakes fifty years ago. A griddle is a round plate of iron about one eight of an inch in thickness fitted with two handles and when it is in use rests on stones placed on each side of the fire. The handles of the griddle rested on the stones. When one side of the cake would be baked the other side would be placed on the griddle. Cakes baked in this way were very hard in comparison to the cakes that are baked at the present day.
