- churning
In small farms butter is made only once a week, but in large farms it is made two times a week in summer but only once a week in winter. We have a churn at home. It is about two feet in height, a foot in width at top and sixteen inches at bottom. The sides are round. It is about forty years old. We do not make any butter now but we send the milk to the creamery. The parts are the staff, the up, and the cover.
The women of any house that usually makes the butter. The strangers would help if they came in because the woman of the house would say "give that a couple of strokes" they believed unless this was done they would be able to carry the butter. It takes about an hour to make the churn. We did the churning by hand and the dash was moved up and down. Sometimes water is poured in to cool the butter because it is very hot in the summer. When the butter is made the buttermilk is drawn and the butter is washed several times. Then it is salted.Jenny murphy
