- Bread was made from wheat and oats. The flour was was made locally. People remember querns being used in the district. My grandfather John Sweeney used a quern. The kinds of bread that were made were Potato cake, Stampy and oaten meal bread which was made in a griddle. The ingredients that were used were oaten meal, soda, and butter milk. Milk was added in kneading. Some people baked enough at one time that would do for a week and others baked every day. Some people used to put two lines through the middle of the cake and others used put a cross. The reason why this was done was because people thought the cake would rise higher. The vessel in which the bread was baked was called a bastable. Currants used to be put in the cakes at Christmas and apples are put in cakes for November night.
