The butter was then salted. For every pound of butter about a half ounce of salt was used. Butter required to hold a short time was salted only lightly.
Firkins in which the butter was packed for the market were made by the local cooper. These firkins were scalded with boiling water and immersed in cold clean water for two or three days. The butter was packed tightly into the firkin, was made level on the top; some cabbage leaves were laid carefully over it, and the whole covered with a tight fitting lid.
