- Butter is not made very much in this locality because now nearly everybody send their milk to the creamery.
The churns they used in this locality before were four feet high and were broad at the bottom and narrow at the top. There was a long pole with a piece of wood on the end of this cut in the shape of a shamrock and they called this a staff and by working this up and down they made the butter. There was a wooden lid on the churn with a hole in the middle of it just big enough for the handle of the staff to come up through so that when they would be moving the staff up and down the milk would not come out over the churn.- Bailitheoir
