- In my district in the olden times bread was made from two principal crops: oats and potatoes. Wheat was the chief source of wealth for the farmer, and he had to pay his rent with the money he received for it. About eightly years ago it was rare to see wheaten bread so the food of the farmer and labourer was oaten bread. This bread was baked two ways: on a griddle and standing against a flat stone in front of the fire.
