- (ar lean ón leathanach roimhe)an eye from which the new shoot comes. When the potatoes are about four inches high they are grubbed with a grubber, which is drawn by two horses. It has eight flat teeth which root up the weeds and breaks the hard clay around the stalks and leaves it easy for the weeding, which is then done by hand. After this the weeds are forked from between the drills. Then they are moulded and after some weeks they are sprayed. In September and October the potatoes are dug and picked and stored away in a pit. To make a pit a furrow is dug two feet deep and three feet wide and whatever length is required to hold the amount of potatoes. Then the potatoes are picked in and a good covering of straw placed on top of then, and clay piled over the straw. In years gone by potatoes were used in place of starch.
