- Colcannon is made on the thirty first of October. Here is the way it is made:- You get a pot of potatoes and peel the skins off them. Then get a pot of boiling water and put the peeled potatoes into the pot to cook with water and salt. When they are done well, get the pounder & mash up the potatoes well adding pepper & salt & milk mix all well up together. When all that is done divide it out to each person. Sometimes people put a hole in the middle of it. A little cold cabbage, parsley, or onion chopped may be added also to colcannon.
