    added when kneading. When it is to be put to bake, marks are put on the cake so as to let out the gas.
    Long ago a sufficient quantity of bread would be made on a Friday to do for a week. The bread would stay fresh as long as it would be needed. A cross was made on the cake before putting it down to bake.
    In years gone by the vessels used for baking bread were as follows : the baker, the oven, the griddle and the pan.
    Sometimes the bread was put standing in front of the fire with a support. It was put on a pan or oven first and when the crust came on the cake it was put in front of the fire to bake.
