- In olden times, it was all home baked bread that was used. Farmers got their wheat ground into flour, and their oats into oatmeal, and made bread of them.
They also used potatoes in the making of bread. The wheaten flour was brown. People used to get some flour, put a pinch of salt in it, and a tea spoonful of baking soda and mix with buttermilk. They would then knead it with their hands into dough, and bake it in a pot oven. This was very whole-some bread.
Oatcakes were made with oatmeal, a pinch of salt was put into the meal and(continues on next page)- Collector
