- The milk is separated while hot. The cream is put in a crock to sour. Then the cream is put into a churn. It is heated with a little water to 62 degrees. It takes about half an hour to churn. The butter is taken off and made into lb rolls for sale. The butter milk is used for making bread.
Our churn is a barrel churn. It is a turn-over. There is a lid on the top with a little round piece of glass in it. When that glass is clear the butter is gathered.
The superstition about churning is when anybody comes into a house where people are churning they must help the people to churn or they say the butter will not come on(leanann ar an chéad leathanach eile)- Bailitheoir
