introduced into the homes to burn coal oat meal cakes were baked in the oven either whole or cut into quarters. This bread was considered very wholesome and nourishing and it is said was the cause of the sound teeth which the old people undoubtedly possessed. The older people to-day claim that toothache and decaying teeth of the present generation are entirely due to the want of oat-meal bread. It is to be regretted that very little oat-meal bread is now made in the homes in the locality.
In by gone days potato bread and boxty bread were largely made too, in the locality. The potato cake was made from cooked or boiled potatoes. They were peeled and washed and mixed with a little oat-meal, a little salt being added. The mixture with some flour was well mixed and then formed into a cake about an inch in thickness. The cake was cut into quarters and baked on a pan or griddle until it was baked thoroughly.
