- Of all the cakes you can make there is none more delicious than a potato cake.
It is made as follows:-
Take a sufficient quantity of potatoes of the not too floury variety, peel them, and mash them up. Take a sufficient quantity of flour as required. Melt some butter and put it in the potatoes and add some salt, soda, and cream, and mix well together.
Fry on a lightly greased griddle and serve at once in a hot dish.- Collector
