  1. To make black puddings you need to get the blood of a cow or pig.
    Long ago people used to make black puddings often. The neighbours used to kill a cow between them and make the puddings that way also. When the blood was warm, pepper, salt, and some of the animals lard or fat were mixed up with the blood. Then the guts were washed clean and cut into pieces each half a foot long. The mixture was poured in after one end of each piece was tied. They were then tied in bunches and put into a pot of boiling water and boiled until they were hard. Hardly anyone makes these puddings now.
