- Long ago bread used to be made from wheat, corn and oats which were grown locally. First the corn, wheat and oats had to be ground into flour and oatmeal. I do not know anyone who remembers querns [?] or grindstones being used. Potato cake, oatmeal bread and Boxty [?] bread were made long ago and are sometimes made yet. Potato cake is made from potatoes and flour. First, the potatoes are boiled and bruised. Then flour is mixed with a rolling pin. After that it is cut into small pieces and put on the pan to bake. Boxty [?] bread is made from grated raw potatoes and a few boiled ones mixed with them. Sometimes flour is added. Oatmeal bread was made from oatmeal which was mixed with tepid water. Sometimes salt and soda were put in to make it brittle. It was cooked in front of the fire leaning against an iron support. Sometimes bread was baked in a grid-(leanann ar an chéad leathanach eile)
