- (continued from previous page)churning is not always moved upwards and downwards it is sometimes given a rolling motion to gather the butter.
A person knows when the butter is made because little bits of it comes up in the lid with the milk. Water is sometimes poured in during the churning to gather the butter. When my mother is lifting out the butter first she washes her hands and the butter-dish with oat-meal then she takes up the butter with her hands into the dish and washes it three or four times. Then she salts it and makes a nice roll of it.(continues on next page)- Collector
