- Potato Bread
The people make potato bread nowadays. They peel the boiled potatoes and they mash them fine with the bottom of a cup on the bakeboard. Then they put a spoonful of salt in the potatoes and they mix the salt through the potatoes. Then they get some flour and mix it through the potatoes and they form the potatoes into a round lump. Then they flatten it out thin on the bake-board and sprinkle flour over the top of it. Then they cut it into four farls and they put butter on the pan to grease it and leave on the farls to cook on the pan. When-ever the potato bread is cooked there is a brown colour on the outside of it. They take it off and leave it on a plate to get cold, and they spread butter on it, and it is ready for eating.- Collector
