A sufficient supply of potatoes is procured and washed. Then [?] they are grated with a grater. The grated potatoes are put into a cloth and the water is wrung out of them. Some boiled potatoes are peeled and grated adn are put into a basin together with the raw potatoes a little salt and one or two fistfuls of flour. When it is mixed it is formed into cakes and baked in an oven on a moderate fire. When it was is baked it is covered with butter and eaten hot- Collector

We have a churn at home and it is three feet high and two feet wide. It is shaped round and there are names on different parts. The boards on which form the sides are called staves. Other parts are the lid and the bottom and the churn dash. Our churn holds fifty gallons. It takes two to do the churning(continues on next page)- Collector
