week and in Winter it is made twice a week.
There is a girl employed for churning and while she is at this work if any of the farm hands come in to the dairy they. take a turn of the churning. The old people say that you could have a wish while churning and it would be granted.
Sometimes the lid is taken off the churn to let out the surplus Gas. The buttermilk is used for baking. Many people come and buy the butter milk. The skim- milk is always given to the pigs. When butter is made the water is put over the butter many times until it runs clear off of it. Sometimes the butter is lifted out to see if it is firm.
