    Pitting
    A man piles the potatoes upon one another & they put rushes down on them. He puts scraws down on the rushes & then bushes down on them & his pit is made & his potatoes free from the crows.
    Varieties
    Formerly the Champion was the general potato but now it is extinct. Its place is taken by the Irish Queen, British Queen, Kerr's Pink, Aran Banners. As a first early variety we use the Epicure & the Flounder. As a second early variety we use the British Queen.
    Creahán
    There are two names for a Creahán namely Creahán or Geinead. A Creahan is a small potato.
