    wet the flour with sour milk and knead it. You put coals on the hearth and put the brand-iron on them. Then you put the gridle on the brand iron and put the cake on the gridle to bake.
    Barm bread is made of flour, milk, salt, breadsoda, buttermilk, oaten meal and Barm. First get flour and make a cake as usual with sour milk, breadsoda and salt. Then put oaten-meal in buttermilk and leave it over for a night. Next morning take the oaten meal and squeeze it. Then put it in a jar by the fire. You must leave it there for about four hours. Then put down the cake and put the oaten meal on top of it. The cake will rise and is very sweet.
    A cross was usually the mark put on a cake. This was done to put us in mind of God and to thank him for having given us full and plenty.
