    when it has dried it is taken in and the milk is put in to it the lid is then affixed, and the churning starts. According to the climate it is churned, in Summer it takes fifteen minutes, and in winter a half an hour. When the churning is finished the glass which is on the churn gets clear, and then the butter is taken off with a saucer, when it is gathered it is put in to a butter dish and it is quoated with salt. A butter clappers is then got and the butter is made hard with it. It
