- Long ago bread made from potatoes, oaten meal and flour. There were many kinds of bread such as boxty bread, oaten meal bread, potatoe cake, and flour and wheaten bread.
The way potatoe bread is made is the potatoes are washed and boiled. When they are (peeled), cooked they are peeled. They are then mashed. The mashed potatoes are put into a bowl a little salt is added and sufficient flour to make the cake the right consistency. When the mixture is kneaded it is turned on to a floured board and rolled out. It is then cut in quarters and baked.
The way to make boxty to peel the potatoes and grate them with a grater. Put them in to a muslin cloth and squeezed it. Put the squeezed potatoes in a dish, mixed with new(continues on next page)- Collector
