- The way to make boxty is first to wash the potatoes and peel them. Then grate the potatoes with a grater made for the purpose. Then throw the grated potatoes into a linen bag and squeeze the water and starch out of it, and put it in a crock and mix it with flour and new milk and a small quantity of salt. When it is well mixed it is made into dumplings or a loaf. The dumplings are boiled in a pot and the loaf is cooked in an oven with fire overhead and under the over. Then it is eaten with butter and tea.
