- Boxty is in general use in this disitrict. There are three kinds of Boxty:-
(a) Pan Boxty - or Boxty Pancakes.
(b) A Boxty Loaf.
(c) Boxty Dumplings - "Get some big potatoes, wash peel and grate them. Then get a piece of cloth and wring all the 'water' out of the grated potatoes. Get a few boiled potatoes peel and pound them with a pounder. (The old people used to bruise them with the bottom of a tin porringer) Get a little flour or some stale bread, some currants or raisins, carraway(continues on next page)
